Artichoke is a perennial herb from the asteraceae family. In Israel it is grows as a garden vegetable. The leaves grow as a broad rosette at the base of the stem and their color is green-gray. large flowers scalps grows out of the stems in blue –purple color. 
In the folk medicine, the artichoke is accepted as one of the herbs that help for anemia problems, as a liver cleaner and a recommended medicine for liver disease; it also helps to strengthen the digestive system. Nowadays, the artichoke is used for reducing cholesterol levels and for cleaning of the gallbladder.
 
 
 
 
For Irritable bowel syndrome, liver diseases, anemia, high cholesterol and more 
  Peel 250 g young artichokes stalks and boil them in a liter of water. Strain and drink the decoction, 3 cups per day. 
When we boil artichoke scalps for eating, it is also recommended to drink the cooked water, for the same therapeutic purposes that mentioned. Other, but less popular way is to eat peeled stems, seasoned with salt and lemon.

Nowadays, it is scientifically known that artichoke encourages recovery of the liver tissue and lowers blood cholesterol levels. In the vegan medicine it is used to treat gall bladder and liver damages that was caused by toxins, alcohol or hepatitis, and for increasing urination.
